About Us
Meet Adrian and Rebecca Santolin - a couple of young(ish), driven, lo-fi Australian winemakers with a growing legion of admirers. They make small batch, highly awarded, heart driven wines at their winery in the Yarra Valley. Adrian makes the wine, Rebecca does everything else.
Adrian Santolin
Adrian brings over two decades of hands-on experience, deep regional knowledge and award-winning craftsmanship to Wine Craft’s contract winemaking services.
Born in Australia to Italian parents, Adrian’s passion for wine was cultivated early on the family’s vineyard and orchard. Steeped in Italian culture and surrounded by a strong connection to food and wine, Adrian’s foundation was laid in tradition and a respect for the land.
His professional winemaking journey began in 2003 in the Hunter Valley, where he quickly progressed from cellar hand to Assistant Winemaker. A vintage in Italy and time spent with extended family further deepened his appreciation for traditional techniques and varietal character.

In 2007, Adrian moved to Victoria’s Yarra Valley, where he honed his skills in Pinot Noir production, vineyard management and the art of minimal intervention winemaking - a philosophy that has defined his approach ever since. “It’s not what you put in, it’s what you leave out,” Adrian says. “Let the vineyard speak.”

Since launching Santolin Wines in 2012, Adrian’s wines have received dozens of trophies and more than 250 medals, including global accolades for his Chardonnay and Pinot Noir. His portfolio now includes Cosa Nostra, a celebration of Italian varietals and Little Saint, wines made for everyday enjoyment.

Through Wine Craft, Adrian now offers his expertise to fellow winemakers and growers, providing flexible, quality-focused contract winemaking services in the heart of Warrandyte, on the edge of the Yarra Valley. Designed to support both emerging labels and seasoned producers, Adrian's blend of tradition, precision and innovation can help bring your wine vision to life.

Rebecca Santolin
Rebecca is one half of the dynamic duo behind Wine Craft. Together with her husband, Adrian, they are first-generation winemakers living their dream, raising a family, all while producing small-batch, lo-fi wines in the Yarra Valley of Victoria, Australia.
Born and raised in Melbourne to Kiwi parents, Rebecca is a loud and proud All Blacks supporter (much to Adrian’s disappointment). She moved to Griffith in 1997 and found a job at a local winery where she met future husband Adrian, going on to study Wine Marketing at Adelaide Uni.
After working at other wineries for many years, in 2012 Rebecca and Adrian decided to take all of their spare money and buy one barrel, one tank and two tonne of pinot noir, and start doing things their way. And the rest is history.
Adding to her business management and marketing skills, she also moonlights as an assistant winemaker to Adrian (ok, she’s more of a glorified cellar hand… with final say on all the blends...).

Beyond winemaking, Rebecca expertly juggles life as a dedicated business owner and a hands-on mum to three energetic girls (not yet on the payroll!) and Rocky the family dog, seamlessly managing the day-to-day operations of the business, attending industry events and ferrying her girls between school, sports and activities.

Together, she and Adrian continue to push boundaries in the Australian wine scene, proving that great wine starts with great people.
